So Glad I’ve Been Swimming and a South Western pizza

Mostly because my back doesn’t hurt, or my hip.  The IBS is much better, so is the Carpal Tunnel Syndrome.  But more importantly, I didn’t yell yesterday.

Yesterday was also tolerable because I’m married to Dan, he ameliorates everything.

Actually, yesterday wasn’t too bad, just busy.  I looked at the to do list and started knitting because I couldn’t wrap my brain around it: co-op (without one classroom area because of the building renovation process) and 3 people missing we had to find subs for; then biology lab (but without two of my children); then a flute lesson; then finally making a pizza for B to take with him to a party.

But M and K played happily the whole time we were at the flute teacher’s house, and the South Western Pizza came out cool (I’d seen a photo in that Family Fun Magazine I saw  in the orthodontists’ office):

On my normal crust (mostly whole wheat with a generous splash of olive oil) I added

  • Pace picante sauce,
  • sliced red pepper,
  • a rinsed can of white beans,
  • some cumin,
  • some sauted garlic,
  • 8oz of Montery Jack cheese.

when it came out of the oven, I dumped an avacado (cubed) on top.

I made two of those, so we could try it too.  The rest of the pizzas were plain cheese with tomato sauce.
